Wine from white grapes following the tradition of Zitsa’s wine wherein Debina of “Yesterday” in traditional spatial vinification was an orange colored wine due to the must fermented with marc and indigenous fungi (an ancient production method which was first used thousand of years ago in Caucasus, in today’s Georgia).
The combination of traditional and modern vinification results in a product with fewer additions, amber color and aromatic complexity. Aromas of dried fruits, marmalade of citrus, citrus, honey, spices. Gentle tannins, balanced acidity and exuberant aftertaste.
Dry white wine from the variety Debina, from selected vineyards in the hilly region of Zitsa and at an altitude of 700 meters above sea level.
The vinification follows the tradition of the region, where the marc are fermented with the must at low temperature and only with the native fungi. The above process results in the particular amber color of the wine.
